Harter House Meats’ New York Strip steak, sometimes called a top loin steak, is a naturally tender cut of meat. Now, that that tender cut of steak and take it to the next level. As soon as the Harter House butcher cuts the steak from the short loin, he carries the New York Strip gently over to Harter House's temperature-controlled cooler and for the next 28 days the magical process of dry aging takes the steak from great to awesome to fantastic to uber-amazing-I-can't-believe-anything-could-bring-me-this-much-sheer-joy-I-think-I'm-going-to-cry PERFECTION. We take tenderness and flavor to the next level by serving Dry-Aged New York Strip steak in addition to Choice cuts. The dry-aging process enhances the taste of the beef for a bolder flavor, and it’s aged to perfection for an extremely juicy cut of strip steak.

|Tips From Your Butcher||Strawberry’s Bar-B-Que Seasoning is great for New York Strip steaks. This dry rub locks in the moisture and doesn’t stick to the grill; but always feel free to use your favorite seasoning. To grill your New York Strip, fire up your grill to 450℉ and place your steak in the direct heat. For a medium-rare strip, cook each side for 8-10 minutes. For medium, cook 10-12 minutes per side. I wouldn’t cook New York Strip beyond medium, because it’ll get too tough and dry.|
|Cutting Tips||When eating your New York Strip, always cut it into bites. While this steak is good enough to take in one bite, we don’t advise it.|
