| Tips From Your Butcher | T-bones are great on the grill or broiled. During winter, when snow makes it difficult to grill, broiling steaks lets you enjoy great T-bones without braving the cold. First, you’ll set your oven to broil—temperatures will vary from oven to oven, but it’s usually 500-550℉. Brush the steaks lightly with olive oil and add your favorite seasoning. For T-bones, I prefer the added flavor of Santa Maria. After placing your steaks in a broiling pan, let each side cook for 10-12 minutes, giving you a tender medium-rare steak. Anything beyond that will rob the T-bone of its juices and flavor. |
