This lamb is naturally flavorful and requires very little seasoning. Suggested Servings The classic rack of lamb should only be seasoned with ingredients that complement its natural flavor. The classic roast includes a rub of fresh rosemary, chopped thyme, garlic cloves, salt and freshly cracked black pepper. Mix these ingredients with extra virgin olive oil and rub along the meat before roasting to bring out the natural gamey flavors of your lamb. Serve with a traditional mint jelly.
